Shredded Chicken Enchiladas

So, tonight was just my son and I so I decided to make Mexican food as he loves it as do I. On Pinterest I found a recipe for Shredded Chicken Enchiladas and they looked easy and good!

Although when I went to the grocery store of course things weren't going to be easy for me. There was no Enchilada sauce. None and no space for it which meant I either had to go to another grocery store or improvise. So, I decided to improvise and use Taco Sauce instead and hope for the best. I have since then decided that if another recipe calls for Enchilada sauce I will make it from scratch instead as it looks pretty easy.

The recipe was simple to follow and I cut down on the amount of cumin and chili powder used as my son is not a huge fan. Next time I would just use taco seasoning instead of both the chili powder and cumin as even with cutting down the cumin I still found it quite overpowering. I used the large flour tortillas and found that my pan filled up with 8 tortillas and I was full after only eating one.

So super easy to make but depending on your taste in spices you may want to alter them!

My review of Captured by Jordan Marie

And Jordan Marie does it again with another non-stop read that has you screaming at her in some instances, loving her in others and then just hating the fact that is a damn cliffhanger and you have to wait to get your hands on the next book.

Skull is the president of the Devil's Blaze Motorcycle Club in Raven Hills, Georgia. He thinks he has his life completely in control when in an instant everything changes when he sees Beth. Nothing can stop him from thinking about her and he knows immediately that she is going to be with him forever.

Beth Benson is drawn to Skull immediately but knows seeing him is going to be difficult, especially the sneaking out of Sacred and Pure Hearts Collegiate Academy of Bantam. But she knows deep down he is worth it, even if it means defying her step-brothers Colin and Matthew. Although Beth knows her step-brothers are dangerous, nothing prepares her for what is coming, especially a visit from the past.

Beth and Skull must decide if their relationship is worth fighting for and how far they are willing to go to be together.

This book is so amazing and I couldn't put it down. I love Beth and she is so genuinely pure and caring. She has gone through so much but still carries on as much as she can. Her relationship with her family is totally creepy and I understood more and more as the book went on and I can't imagine living how she did for so many years. Her character is amazing and she deserves so much happiness and love!

Skull rocks, well maybe until the end when I may have yelled at him and then the author for ending it. He is the ultimate bad boy biker dude, yet has such a soft spot for Beth and there is nothing he wouldn't do to protect her. His breakdown at the end was so deserved and I am so glad his brothers were there for him to pull him out and focus on healing.

I can already tell how hooked I am going to be with this series and I can not wait for the next one and will be following the author carefully to see if she leaves any clues to the cliffhanger!!

My review of Aurora's Song by Cherime MacFarlane

Algen has just returned to Alaska after spending many years in Washington. At night her voice seems to bring the lights of the Aurora Borealis close to her, yet there is still much mystery behind how she can do it or if it is all in her imagination.

New in town, Gunrik Agardson is attracted immediately to Algen but he has a hidden agenda with researching the lights. Gunrik must work together with the local 'Grannies' in town to help Algen.

This book is full of mysteries surrounding the Aurora Borealis and the relationship between a girl, the spirits and the lights. I found initially I had a hard time warming up to Algen as she seems to be closed off to most of the people around her. I wasn't sure what angle Gunrik was coming from but I did end up really liking him when I saw how much he cared!

I loved the inside look into Alaskan myths and look forward to learning more!

My reviews of the Moonbound Series by Krystal Shannan and Camryn Rhys

The Werewolf Cowboy 

Allan VonBrandt is the sheriff in Somewhere, Texas and tries to live his life protecting the humans in town. Yet, he lives a secretive life as he is a werewolf, but the people in town are unaware. Allan wants to live his life as a human and tries to keep his wolf in as much as possible.

Then he meets Reyna Dubois, who is positive that Allan is her mate. But the problem is that Allan doesn't want a wolf as a mate, he wants a human and he does everything he can to push Reyna away.

Will Reyna be able to change Allan's mind or is he determined to reject his wolf? And when one of the packs finds a lone wolf, Elise in New Orleans will they be able to solve her mysterious past?

I really enjoyed this book! I love the protective nature of Allan and how he wants to live among the humans, yet still has duties to his pack. But he is so attracted to Reyna that he is torn between his two lives. I found that very believable and made me understand him so much better.

I loved Reyna and her determination not to give up on Allan. She was a flirt and lots of fun but was trying to be everything that Allan wanted - housewife, etc. It made me laugh for the lengths she went to in order to impress him.

This is starting off to be a great series and I can't wait to see what happens next!

The Werewolf Bodyguard 

Aria LaBlanc is in Las Vegas for a werewolf Summit Meeting to figure out where the mysterious werewolf Elise came from. There she meets Marco DiSanti, the chef at Amare who is another werewolf who belongs to no pack either.

As Aria and Marco begin to get closer, they need to learn more about his past and if there are other werewolves out there besides him and Elise. Will Marco's mom, Mary Foster, let them in on their past and will they be able to solve what is happening?

In this book the mystery is definitely heating up! I liked Aria and how she finally understood what Reyna had gone through with Allan. I feel super bad for Marco and the fact that he was on his own for so long due to the warnings him mom gave him, yet he could have had protection. Aria and Marco definitely had a very strong connection and can't wait to see where this goes!

The mystery surrounding Elise and Marco is definitely getting more interesting and I am loving learning more about their pasts and can't wait to see where it leads!

The Werewolf Ranger

Ranier "Rain" Dubois is an enforcer for his uncle, Francis Dubois's New Orleans pack and has been called in to help find a brothel in Mexico with enforcers from other packs. Included in that mix is Nora Cavanaugh who is trying to escape from her father's control. Unfortunatelty their attraction for each other is huge and they give in to their desires for a night of passion.

As the group heads to Mexico their relationship puts strain on the pack and each other. Will the group be able to put aside their differences and find what they are looking for or will the tension between Rain and Nora break the group apart?

Wow - so much tension in this book!! The relationship between Rain and Nora is intense with so much pressure on them. I felt so bad for Nora and how controlled her life was from her father and how scared she was of him. Rain is torn between giving into his desires and just escaping back to his past as a Ranger.

The mystery in Mexico is getting more intense and I can't wait to see what happens in the next book!!

Chasing a Wolf

Thomas Rivera is the Vegas pack enforcer and is headed to a mountain region of Mexico on the trail of Adrian. What he doesn't expect is a secluded society that has kept themselves apart from everyone else, and therefore has no modern technology. Yet there he meets the mysterious Citlani, whom he is instantly attracted to, yet she has a hidden agenda of her own.

This book is different from the others with the introduction of Cetlani who has never come across cars, etc. and keeping her far away seems to have kept her hidden and safe. It's funny how much Cetlani was able to get to Thomas emotionally, with how much he came down on Rain in the previous book. This book was also much darker as we got closer to Adrian and can see what he is capable of. The end of the book definitely broke my heart a little though.

I also loved how the group came together when needed, and even though Maggie was shocked at Thomas they all were still able to work together to try and find Adrian. I hope Maggie gets her happiness soon as she really deserves it!

This series has definitely got me hooked and I can't wait for the next book!!

My review of Angela Ford's books!

Closure

Jessica Resario works for the FBI in the Internet Security Division, hunting down child predators. What she doesn't realize is that her current case is linked mysteriously to her past and she finds her own life in danger.

When Jessica left for college her parents were murdered in what was deemed a break and enter, but not a lot was stolen and their deaths remained unsolved. Now Jessica wants closure on the case. Can she get close enough to solving the mystery before anyone else gets hurt?

I really liked the character of Jessica, in that she was great at her job, yet not afraid of pushing the boundaries when she knew she could save a life. Yet she was shaken by someone knowing who she was with no reason why they should. I loved that she had secret feelings for Tom Erickson and how torn he was when it came to her.

Such a great mystery with an amazing team bond!! Their team dynamics were awesome and I loved getting to know the characters!

Forbidden 


This is the second book and I think more intense than the first!

Jessica Resario is now been promoted to Special Supervisory Agent when after giving a presentation at a local school on child predators and the internet, she and Special Agent Mike Turner are approached by Richard Bennett about his daughter Tiffany. Jessica agrees to look into more and she is sure that Tiffany is in over her head.

Desperate to help Tiffany, Jessica puts her own career on the line. The problem is that it's not only her career that she is in danger of losing. Will Jessica be able to save Tiffany, herself and the members of her team before it's too late and the past comes back with a vengeance.

Wow - there were definitely some things in this book that I never saw coming! Jessica is still a super strong character who seems to think more with her heart on occasion, over her head and duty. The team bond is still so strong in this book and it is truly wonderful to see how they all come together and protect each other.

I also really enjoyed the developing relationship between Tom, Nicole, Amanda and Jessica. I loved that they all made such a great effort to get along and it seemed really strong. I say developing as it was said in the book that previously Tom wasn't the best father but it showed how his new position was allowing him to be there for Amanda.

Can't wait for the next one!

Obsessed

This is the third book in the series and I really don't think it will be the last!

Jessica Resario has left the FBI to make a family with Tom and their "family". The problem is that the past keeps coming back and now the job is left to Supervisory Special Agent Mike Turner and his team to find out who is after Jessica now.

But, as they get closer it looks like this one becomes personal for Mike and maybe they aren't finished with the case after all.

When I finished the book I know there has to be more coming as I really hope the author hasn't left us hanging and I still think Mike is in some danger!


Poor Jessica and Tom and how crazy people just seem to find them and inflict themselves on them. All they are trying to do is move on with their lives but the past keeps on coming back. I was totally surprised on who was involved but I know there are still some major secrets out there and I am eagerly waiting for the next book to be written!!

My review of Taking Me Home by Stephanie Summers

Such a heartbreaking conclusion to Take Me On that kept me wondering what was going to happen with Ash and Lila.

Ash London is finally content with his life and girlfriend Lila Stephens. Then he is forced back on the road to tour with Ferrium, his band, and one night a decision puts everything at risk. As he begins to spiral down a very dark path, will he open up and tell Lila the truth or will he keep it from her.

When the truth is finally revealed will Lila continue to stick by Ash or will the continual lies and secrets push her away? Will her love be enough to save him?

Wow - this book deals with so much emotion, heartbreak and frustration. I was so frustrated at Ash for almost the entire book as he was willing to risk everything he had and lose it all. Yet, in order to get better he had to which must be so hard for anyone knowing someone going through this. Lila was there for him all she could be, but she had to draw the line somewhere and she really put up with a lot.

The love the two had was so intense through the whole book but Lila knew that it wasn't going to work while Ash denied his issues. She had enough to recover from herself, never mind dealing wiht his problems as well.

This was an incredible book but so hard on the heart! I truly loved this series and I can't wait to read more from this author!

Slow Cooker Chicken Teriyaki

Sometimes it is so difficult cooking for children. Well, maybe just my kids, specifically my daughter. Her brother and I both enjoy sushi so lately when we have gone out for sushi I have bought my daughter Chicken Teriyaki with rice. So I decided to give it a try at home and use the slow cooker as some days I am limited with time in making a good meal.

The slow cooker is so easy to use and means I have no work to do so I love using it and wonder why I don't use it more. Although I often find that the recipes seem to be almost all the same so I get bored with it. But I am really going to try using it more.

I used my large slow cooker for the chicken as I had three very large chicken breasts and that way they could all cook beside one another. I think the only small problem was that not all the chicken was submerged under the sauce so a couple corners dried out a bit too much for all of our liking. My son said that it was too strong of a soy sauce flavour. I think next time I would perhaps add in either some water or some actual teriyaki sauce to take some of the bite away of the soy sauce. I did agree that it was a bit too strong of a flavour and didn't have that authentic teriyaki taste with it.

I served it with brown rice and the kids were definitely more excited about the rice than the chicken. I will definitely try finding a recipe for Chicken Teriyaki that they both love! This one definitely has possibilities to be altered a little!

My review of Just Realized by Lucy Gage

OMG - I just found my new book boyfriend!

Sgt Owen Nichols has just come home from the war for one week of vacation and is spending time with his best friend Neil Murphy and his girlfriend Meghan. Meghan and Neil introduce Owen to Meghan's cousin Nina Jacobs and both are very attracted to the other. But both have their guard up over what could be a "relationship" after being hurt in the past and with Owen only in town for a week, maybe they are meant to only be friends. Yet, their friendship grows and as Nina ponders a relationship with someone else, will the two be able to sort out their feelings before it is too late?

This book is so incredible and so emotional at parts that I just wanted to cry. I have been reading the whole series and I always loved Nina and felt so bad at what she went through in the past with Liam. This book really examines Nina's past and you completely learn about her on a different level and really understand that she deserves so much happiness.

Sgt Owen Nichols is a complete dream in so many ways. He really treats Nina like a princess and wants her to be happy. Their friendship is amazing and he cares about her so much and it is so frustrating when she moves towards Noah. I love his dedication to his friends and fellow soldiers and can't help think how amazing he is!

I absolutely love this family and all of the extensions that you meet through the series. Every book introduces you to new views on the different characters and the author truly has you feeling like you belong in this family and are apart of it!

I can't wait for the next book and am crossing my fingers that there is one!

My review of Sullivan's Secret by Robin Murphy

Marie Bartek is a veterinarian who can encounter spirits. She hasn't seen in any in years when they all of a sudden start visiting her again. With the help of her best friend, Gale Winters, they form SIPS - Sullivan's Island Paranormal Society with other people with abilities.

 Although people in town have doubts, including Marie's love interest Police Chief Cory Miller, they are getting clues and finding out things that haven't even happened yet. And soon it begins to get personal for Marie and will she be able to be saved in time?

I liked the book but at times I found myself drifting a little. I think it's due to the author wanting you to learn so much information about everyone as it is the first book in the series. I enjoyed Marie and Gail and the friendship between the two. They both had good lives and it didn't seem that their relationship with "spirits" was fake, which made the book good and believable.

I did figure out who the killer was ahead of time but not all the reasons why and I really enjoyed discovering that as it did take me by surprise!

I am definitely looking forward to reading the next book in the series as I think it does have great possibilities.

Favorite Sloppy Joes

I've realized lately that I haven't been posting any recipes. I've named my blog "Family, Books and Food!" but there's no food so I have decided that Sunday's are going to be a day where I post recipes that I have used recently. Most of the recipes will be coming from Pinterest as that's where I plan my meals from but occasionally I may have a recipe from one of the many recipe books that I have.

I love cooking and baking and trying new things but I have found that with the kids schedule I am unable to do as much I would like. I can't remember the last time I baked anything and even though I have been cooking lately I haven't documented a thing but that's going to change. Generally I cook once or twice a week from scratch but it depends on the week and what I have on hand. I find when money is tight, especially after the holidays, I try and use up what I already have in the house and therefore don't make as much. But I am going to try and cook more and let you know what I try. Some things may turn out to be absolutely delicious and others may not but I am going to share with you the things I try and would love for you to send me some of your favorites if I try something that you have a favorite for.

So, this dinner was an absolute success in that it was easy and both the kids enjoyed it! That to me is a dinner worth talking about! I made a half recipe and would definitely make a full one next time and freeze the leftovers. I never changed anything and it turned out awesome! Gotta love good Sloppy Joes!

Early One Morning by Aubree Lane

Wow - so many twists and turns I never had a clue whose side anyone was on!

Annie Harper has flown to Hawaii after her best friend Marissa Crandall said she saw their secret crush Terence Javier there. Once there she realizes that Terence is more than she could have imagined and the two begin a relationship. In Hawaii Annie meets Terence's daughter Erika, whose mother, Hannah, was once close friends with Annie and Terence wants to keep Erika. But life's not that simple and soon they discover that each of their lives, and the lives of their friends and past relationships are so intertwined that alliances are made and broken and no one is sure who they can trust.

This book was great and kept me at the edge of my seat as I never knew who I could trust. I really liked Annie but found she was so confused due to not having a proper childhood with her own mother that she in turn had so many doubts about herself. Growing up with Marissa's family she felt as though she had a new family, but it never felt as secure as she would have liked.

I loved Terence and found he was so innocent through everything and was kept in the dark way too much. I was blown away by his devotion to both Erika and Annie and that all he truly wanted was a family that he could love and devote himself to.

For the most part the rest of the characters I had love/hate relationships with, as I'm sure the author was counting on. I went from liking them to hating them and back to liking them and I never had a clue what was going to happen next!

Such a great job with the book and I can't wait to read more!

My review of Speaking Greek by Selena Laurence

I really loved this book and thought the author did an amazing job with the characters and the development through the book.

If Tess Richardson believes in anything it is following the rules. Her father is a DA, her brother is FBI and her mom used to be a police officer. Yet, when she meets Niko Stephanos, she finds her own personal rules may be in need of a little breaking. Especially when it comes to the chance of a possible office romance with her boss.

Niko Stephanos seems to have his life all planned out for him, by others, and he doesn't question much with the family business that he is poised to take over. Yet he gets the feeling that things aren't as they should be.

How much will Tess and Niko risk for the other one or will blood always come first?

I love Tess and everything she stands for yet I was definitely happy when she gravitated towards Niko and let her guard down with him. He definitely brought out so much goodness in her, yet she had an amazing sass to her that was very refreshing and fun.

Niko seemed to be torn between what he wanted to do in life and what he was expected to do. He had everything in life that he could have wanted, yet he really wanted a true love and not someone after his money. But his tie to his family was so strong, especially to his cousin Christos.

I loved the mystery and a few things the author threw at me that I wasn't expecting! This was a great book and I look forward to many more from the author!
